Restaurants serving ‘elevated’ vegetarian food are all the rage in Bangalore right now and customers are queuing up for Margharita Kulcha and Avocado Tostadas. But long before what now looks like a novelty, Sattvam was serving vegetarian food of an excellent quality in an upscale setting. This restaurant, with its flagship outlet in Sadashivnagar, has been a cornerstone of high-end vegetarian dining in Bangalore for over a decade.

Sattvam’s expansive buffet has been hugely popular over the years, and the restaurant is marking its 10-year milestone with the introduction of a thoughtfully curated a la carte menu, currently available for dinner. While the buffet was about variety and choice, the dinner menu invites you to focus and enjoy the nuances of vegetarian cooking, Sattvam-style.

Chef Aditya Fatehpuria has spent his entire career working with vegetarian cuisines, paying special attention to purity and freshness. From the new menu we would recommend the Smoked Sweet Corn Essence, a comforting corn soup made even better with a hint of smokiness,

Sattvam has always made excellent chaat and the Betel Leaf Tartare is a stellar dish. It a modern interpretation of palak patte ki chaat, using betel leaves. They are dipped in the lightest batter and fried to a crisp. The dahi, chutneys and condiments all come together to make this a happy chaat experience.

Several of the other small plates are similarly inspired, such as Badal, hung yogurt tikkis wrapped in fine strands of pheni, to make light-as-clouds mouthfuls. If you order Cheriya, you’ll get a delightful line-up of mini appams and accompaniments.

The nimona, a seasonal favourite from up North, gets a twist here. The Firangi Nimona is a hearty green pea curry with a blob of Buffalo Mozzarella and is perfect with warm rotis.

We personally prefer the Indian dishes here, but you can also try a Mee Goreng or the Butterfly Rice Bowl with bluepea-tinted rice and edamame.

For dessert Basant, Sattvam’s take on kunafa is a must-have.
